Baked Chicken & Asparagus Casserole


I finally made it to the grocery store yesterday.  We blew our January grocery budget, so I was holding out until February and ready to go first thing on Monday morning, then remembered that the Super Bowl was tomorrow and you can’t watch the game without really unhealthy fried snacks, chips and salsa, pizza, etc…  I caved and we now have groceries (it’s only three days early).  I have some great new “clean” recipes to try.

Last night I made Baked Chicken & Asparagus Casserole.  It’s very simple to make and reminded me of the simple all-in-one dishes that Kraft or Campbell’s comes up with and each dish requires use of all of their products.  This one was by far the best one I’ve had.  It was very flavorful, although it looked very “blah”.  After taking the photo, we added some ground pepper to make it look like something other than “bland”.  The flavor was all but bland though.  Everything blended together well.  We’ll definitely make it again and it was super simple to throw together.

Asian Scrambled Eggs


I liked these…my husband did not.  He is your regular meat and potatoes kind of guy.  He doesn’t need anything fancy and these Asian Scrambled Eggs were pretty fancy.  He ate most of them, but said that he’d prefer regular scrambled eggs with some cheese in them (which is a heck of a lot faster to make).  I thought these tasted great and loved that there was extra things going on with them (versus the plain ol’ boring scrambled eggs).  I would definitely make these again, but I guess I’ll be making them for one.

Honey Wheat Bran Muffin


I have to admit that these muffins are really good.  I was skeptical, especially after seeing what the ingredients looked like going in (boring).  The muffins have a hint of sweetness (from the honey in them).  They only have 83 calories in each one and they are a normal sized muffin.  I will definitely make these again.  They were so quick to make and are great to have on hand for a snack.

Herb-Stuffed Pork Tenderloin with Seasoned Edamame and Beans


Can you believe that I couldn’t find a pork tenderloin at the grocery store.  *sigh*  I opted to use butterflied pork chops, which ended up working out very well, although I felt I cooked them a bit too long and they were a bit dry.  The flavor was very good and they were pretty simple to make.  We would definitely eat them again.

I paired these pork chops with baked sweet potatoes and another new recipe, Seasoned Edamame and Beans.  They had a little spicy kick to them, but not too bad.  It was the first time my husband had tried Edamame and he is definitely not a fan.  I would make these again, but separate out the beans so I’m eating just the Edamame and he eats the green beans.

Spinach, Apple, & Cheese Panini Sandwich


This is one of my favorite Eat Clean recipes!  I’m not a huge meat eater, so the fact that this has no meat is a plus for me.  The flavors together are so amazing!  I’ve eaten this sandwich five times in the past week (yes, it’s that good).  It’s quick and easy to put together.  I highly recommend it! YUMMY!

Potato & Egg Italiano Sandwich


I have to say that this is one of our favorite breakfast recipes.  It was very filling, tasted amazing (and healthy…what a great combination).  We will definitely make this again (over and over).  It is definitely worth trying.  I ended up making too much of the egg mixture, but we had leftovers for two more breakfast meals and this sandwich even tasted good as a left over.

Chicken & Broccoli Pizza


Since we just had an amazing Turkey Pizza last week, this Chicken & Broccoli Pizza just didn’t measure up.  It’s good, but if I had the choice of which pizza to make, it would be (hands down) the Turkey Pizza.  If you like chicken on your pizza and are a fan of broccoli, this recipe is certainly worth a try.

Protein Apple Wraps


For breakfast this morning we had Protein Apple Wraps.  We both agreed that they were very good, but both felt like they were more of an afternoon type snack instead of a breakfast (although I would eat it for breakfast again).  They were quick and easy to make and the flavors together tasted really good.  The only added thing I did was to heat them in the microwave for 15 seconds to warm them up a bit, which I would recommend, unless you prefer otherwise.  I’m not sure how I was suppose to “roll” these up, so I just pretended it was a burrito and closed it that way, then cut lengthwise (which I’m sure is not what the recipe had intended).  No matter how they were wrapped, they would have tasted the same, which was really good!

Microwave Turkey Jacket Potato


For dinner we tried these Microwave Turkey Jacket Potatoes.  They were quick and easy to make and tasted very good.  My only complaint was the texture.  When you have something that looks like a twice-baked potato and then add ground turkey to it, the texture just isn’t quite the same as what you think you’re biting into (which looks to be just a nice textured twice-baked potato).  I would make these again, especially because they were so simple to make.  They were extremely filling, which was a nice added bonus.  I do recommend microwaving it again (once you have the potato put back together) so that it is completely hot.  We had to do this with ours.

Turkey & Cheese Pizza


For lunch today (yep, on a roll again with making clean meals), I made a turkey and cheese pizza.  This recipe is from one of my Clean Eating magazines, but came out of the Eat Clean Kids Cookbook.  The magazine was advertising the launch of the book and listed a few recipes from it.

My only changes were adding some cheddar cheese (due to not having enough mozzarella cheese) and I did not add mushrooms (neither of us like them).  I also cheated and used a whole-wheat pizza crust (already made) instead of mixing the dough and using that.  I will try making this again with the dough mix, but having one already ready to use made my preparation go a lot faster.

My husband and I both agree that this is in our top 5 favorite “clean” meals we’ve eaten so far.  He even said that he would eat this pizza over Papa Johns pizza any day.  It was very simple to make and the flavor was outstanding!  I will definitely be making this again (and real soon)!
