Does anyone even know what that means? I’ve never heard of it before and it sounds very strange. Why not call it “A Spin On Chicken Veggie Soup”, because that’s basically what it is. It was pretty easy to make and tasted really good (even the leftovers). It pretty much tasted like a Chicken Noodle Soup without the noodles and the addition of several other ingredients (um, that doesn’t make a lot of sense, does it?). Anyway, it’s easy to make and tastes great, so we give it two thumbs up and will be making it again.
SANCOCHO
Serves 4
2 tsp canola oil
1 medium onion, diced
3 garlic cloves, minced
1 carrot, chopped
2 cups reduced-sodium chicken broth
2 cups water
2 chicken breasts, cubed
1 jalapeno pepper, ribs and seeds removed, finely chopped
1 tsp cumin
1 sweet potato, cut into 1/2-inch cubes
1 red pepper, seeded and chopped
Chopped cilantro (optional)
In a stockpot, heat oil over medium heat. Add onion, garlic, red pepper, carrot, sweet potato, and jalapeno pepper and cook for 7 minutes, stirring often. Stir in chicken broth and water and add cumin and increase heat to medium high. Cook for 20 minutes. Add cilantro as a topping and serve.
