Hearty Banana Bread

I have to say that putting the ingredients together and seeing the batter makes this muffin seem less than desirable, but the taste is good and I will make them again. Next time I may add a little vanilla extract, cinnamon, and nutmeg to them (what my normal (um, fattening) banana bread recipe has in it). It wouldn’t change the nutrition facts either, which is nice. When I do make them again and try the new way, I’ll update to let you know if they’re better and worth changing the recipe permanently.
HEARTY BANANA BREAD
Serves 12
Cooking spray
5 ripe bananas, mashed
3/4 cup Sucanat
3/4 cup ground flaxseed
1/4 cup milk
1/4 cup Greek yogurt or cottage cheese
2 egg whites
2 cups whole wheat flour
1 tsp baking soda
1/2 tsp sea salt
Preheat oven to 350 degrees F. Spray entire 9-by-5″ loaf pan with cooking spray.
In a medium bowl, mash bananas. Add sweetener, flaxseed, milk, yogurt cheese and egg whites. Mix until well blended. In a smaller bowl, whisk together flour, baking soda, and salt. Stir the dry ingredients into the banana mixture until moistened. Spoon into loaf pan. Bake 1 hour and 10 minutes, or until a toothpick inserted into the crown comes out clean.
