Microwave Turkey Jacket Potato

For dinner we tried these Microwave Turkey Jacket Potatoes. They were quick and easy to make and tasted very good. My only complaint was the texture. When you have something that looks like a twice-baked potato and then add ground turkey to it, the texture just isn’t quite the same as what you think you’re biting into (which looks to be just a nice textured twice-baked potato). I would make these again, especially because they were so simple to make. They were extremely filling, which was a nice added bonus. I do recommend microwaving it again (once you have the potato put back together) so that it is completely hot. We had to do this with ours.
MICROWAVE TURKEY JACKET POTATO
Serves 1
3oz. Jenny-O ground turkey breast
1 large baking potato
2 tbsp salsa
2 tbsp low-fat sour cream
Italian seasoning, to taste
Brown ground turkey in a medium skillet over medium-high heat until cooked through, about 10 to 12 minutes.
Pierce potato with a fork and place inside a clean, damp brown paper bag. Microwave on high for approximately 3 minutes. Turn it over, and cook another 3 minutes. (Every microwave oven is different, so times may vary). Let it cool for about 5 minutes. Slice open potato. Scoop out center, leaving about 1/4 inch for stability.
Mash scooped-out potato with other ingredients, and then stuff mixture back into potato skin. If you wish, you can microwave it again for about 1 minute so that it’s very hot.
