Honey Wheat Bran Muffin


I have to admit that these muffins are really good.  I was skeptical, especially after seeing what the ingredients looked like going in (boring).  The muffins have a hint of sweetness (from the honey in them).  They only have 83 calories in each one and they are a normal sized muffin.  I will definitely make these again.  They were so quick to make and are great to have on hand for a snack.

HONEY WHEAT BRAN MUFFIN

Serves 12

1 cup wheat bran
3/4 cup skim milk
2/3 cup whole-wheat flour
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1 large egg, beaten
1/2 cup fat-free vanilla yogurt
1/3 cup honey
1 tsp vanilla
1/4 cup pecans (optional)

Preheat oven to 375 degrees F. Line a muffin pan with liners.

Combine wheat bran and milk in a bowl and let soak for 5 minutes.

In a large bowl, whisk together dry ingredients.

In a separate bowl, mix together egg, yogurt, honey, vanilla and wheat bran mixture. Mix the yogurt mixture into the flour mixture. Fold in pecans (if desired).

Spoon batter into prepared muffin cups. Bake for 18-20 minutes or until tops spring back when lightly touched. Cool on a wire rack.
