Chicken & Broccoli Pizza

Since we just had an amazing Turkey Pizza last week, this Chicken & Broccoli Pizza just didn’t measure up. It’s good, but if I had the choice of which pizza to make, it would be (hands down) the Turkey Pizza. If you like chicken on your pizza and are a fan of broccoli, this recipe is certainly worth a try.
CHICKEN & BROCCOLI PIZZA
Serves 4
16oz. fresh whole-wheat pizza dough (pre-mixed)
1/2 cup pizza sauce
8oz. grilled, boneless, skinless chicken breast, chopped into bite-sized pieces
1 cup chopped, cooked broccoli
1/4 cup shredded reduced-fat Cheddar cheese
Preheat oven to 500 degrees F. Preheat a baking sheet or pizza stone in top third of oven.
Divide pizza dough into 4 equal pieces. Roll out each piece into a 6-inch round. Spread 2 tbsp of pizza sauce evenly over each round, leaving 1/4 inch around empty edge for sealing pockets. Divide chicken and broccoli evenly among rounds, leaving top half of each round empty. Top chicken and broccoli with 1 tbsp of cheese.
Pull top half of dough over chicken and broccoli, and press your finger along edge of dough to seal. Cut an X on top of each pocket to let steam escape while baking. Place pockets on preheated baking sheet or pizza stone, and bake for 7 minutes.
