Bananas & Mocha Cream

I’ve been wanting to make this dessert for the past few days and now kicking myself that I didn’t. It tastes amazing! I could eat this every night and be in heaven. The combination of ingredients with the bananas is so perfect! I was definitely hesitant about this having cottage cheese in it, but you can’t tell at all. The directions suggest blending it or just stirring it in a bowl. I highly recommend using a blender of some sort (I used my Magic Bullet) so the cottage cheese gets broken up and the consistency is smooth. I didn’t layer it as specified (as I don’t need anything to look fancy if I’m just going to eat it right away). This was a very refreshing dessert with loads of flavor. My only change would be to add another 2 tablespoons of coffee to it (but I’m a huge coffee fan).
BANANAS & MOCHA CREAM
Serves 8
2 large bananas, sliced into 1/4-inch coins, divided
6oz. low-fat cream cheese
6oz. low-fat cottage cheese
1/3 cup sucanat
2 tbsp prepared strong coffee
1 tsp vanilla extract
2 tbsp dark chocolate, grated for garnish
Layer 1/2 the banana slices in the bottom of an 8-inch square pan; set aside.
In a food processor or mixing bowl, combine cheeses, sucanat, coffee, and vanilla until well blended.
Spread 1/2 the coffee-cream mixture over banana slices, top with remaining banana slices and then remaining coffee-cream.
Top with grated chocolate and chill until ready to serve.
