Strawberry and Mozzarella Salad

This salad was very interesting at first. I wouldn’t say it was love at first taste. As we both continued to eat it, it did end up tasting much better and by the end of the salad, we both said that we’d eat it again. The combination of ingredients was interesting, but the flavors mixed together had a great taste.
STRAWBERRY AND MOZZARELLA SALAD
Serves 4
2 tbsp olive oil
1 tbsp balsamic vinegar
¼ tsp sea salt
¼ tsp freshly ground pepper, or to taste
1 heart of romaine lettuce, torn or cut into bite-sized pieces (3 cups lightly packed)
1 8-oz container of strawberries, hulled and sliced
3 oz part-skim mozzarella cheese, diced (about ¾ cup)
¼ cup fresh basil leaves, cut into ribbons
In a small bowl, whisk together oil, vinegar, salt and pepper. Place lettuce in a large bowl and toss with half of dressing. Place lettuce onto 4 salad plates.
Toss strawberries with remaining dressing and place ¼ of berries on top of each mound of lettuce. Top each with cheese and then sprinkle with basil.
