Spicy Bison Burritos


These burritos were a nice surprise! We both thought they were great and would make them again. They were very easy to make and had a lot of flavor. The recipe says that the salsa is optional, but we think it’s required (or the burritos would be a little dry). Worth trying.

SPICY BISON BURRITOS

Serves 4

1 tbsp olive oil
1 medium onion, diced
4 jalapeno peppers, sliced
1 lb ground bison
4 whole wheat tortillas
4 oz grated low-fat cheddar cheese
Salsa (optional)

Heat oil in a large frying pan, then add onion and jalapenos. Cook until they soften slightly.

Add bison, chopping it with a spatula as it cooks. Keep on heat until cooked through, about 10 minutes.

Serve in tortilla and top with cheese. Add salsa, if desired.
