Pizza Pizzazz

I have to admit, these are really good! My husband is not a fan of cottage cheese and even asked me what the “white stuff” was on this “mock” pizza. After I convinced him to at least try it, he requested it again for dinner. He loved this recipe! It was so simple to throw together and makes for a very quick meal to assemble (just allow 20 minutes to bake in the oven). We will definitely eat these….and often.
PIZZA PIZZAZZ
Serves 2
1 tomato
Pinch dried oregano
Pinch dried basil
Pinch ground black pepper
2 slices Ezekiel bread
6 oz grilled chicken or turkey breast
2/3 cup low-fat cottage cheese
2 tbsp grated Parmesan or Asiago cheese
Cut tomato into slices, season with oregano, basil and pepper and put 2 to 3 slices of tomato on each slice of bread.
Cut chicken or turkey into thin (1/4 inch) slices and put on tomatoes.
Divide cottage cheese evenly and top chicken or turkey. Sprinkle with cheese.
Bake in toaster oven at 400 degrees F for about 20 minutes or until top becomes slightly golden brown.

I still can’t believe that cottage cheese can taste so good. It’s amazing how much different it tastes after it’s been cooked. Good stuff.
