Whole-Wheat Pancakes


I’m a little late on posting, but over the weekend I made some Whole-Wheat Pancakes.  We both loved them and they were filling.  I did add cinnamon to them (which was not part of the recipe).  The picture shows half of what it actually made.  It came out to more than 8 pancakes total made (due to me making mine a little smaller than they needed to be).  We will be having these again.  Very good!

WHOLE-WHEAT PANCAKES

Serves 4 (2 pancakes each)

1+1/4 cups Old Fashioned Quaker Oats
1+1/4 cups skim milk
1 large egg
1 tbsp canola oil
1 cup whole-wheat baking flour
1 tsp low-sodium baking powder

In a medium bowl, mix oats with milk; let stand 5 minutes. Add egg and oil, then mix. Add dry ingredients and mix until just blended. Cook on hot, nonstick skillet until golden brown. Flip and cook until other side is golden. Optional: For an antioxidant boost, add 1/4 cup fresh blueberries to batter before cooking.
