No-Cook Chicken Burrito

My husband worked from home today, so I made something a little different for lunch. We both loved these No-Cook Chicken Burrito. They were very filling and tasted great, not to mention so easy to make. As you can see, we both prefer to eat our burritos differently (he folds in half and I roll mine up). He opted for no beans or sour cream, I opted for no chicken (not a huge meat fan), and we both added cilantro. We will definitely be making these again.
NO-COOK CHICKEN BURRITO
Serves 4
2 cups shredded chicken
1 cup vegetarian non-fat refried beans
4 soft-taco-sized tortillas
1 cup cooked brown rice
1 cup romaine lettuce, shredded
1 cup diced tomatoes
4 tbsp fat-free sour cream
Salsa, to taste
Heat the refried beans in a bowl 1 to 2 minutes, covered, stirring after 1 minute. Warm chicken in microwave for 1 to 2 minutes.
Fill each tortilla with 1/2 cup chicken, 1/4 cup beans, 1/4 cup rice, 1/4 cup lettuce, 1/4 cup tomato and 1 tbsp sour cream. Top with salsa, to taste. Roll burritos and enjoy.
