Meatloaf

Tonight for dinner we had Meatloaf and it was amazing! I’m loving that “clean” foods are flavorful! It’s very rare that we find a “clean” meal that we don’t like. The meatloaf was so fast to put together, but then you have to wait an hour before it’s time to eat it, so you need to plan ahead. We will definitely have this again. Very good!
MEATLOAF
Serves 4
1 tbsp Olivina margarine
1 cup chopped onion
3 cloves garlic, minced
1 lb. Jennie-O Extra Lean Ground Turkey Breast
1/2 cup Old Fashioned Quaker Oats
1 large egg
3/4 cup salsa
2 tsp Worcestershire sauce
3/4 tsp sea salt
1/2 tsp freshly ground black pepper
Preheat oven to 350 degrees F. Melt Olivina in a small skillet over medium-high heat. Add onion and garlic; cook 5 minutes, stirring occasionally. Transfer mixture to a large bowl and let cool 5 minutes. Add turkey, oats, egg, 1/4 cup salsa, Worcestershire sauce, sea salt and pepper to onion mixture and mix well. Press into an 8×4-inch loaf pan. Spread remaining 1/2 cup salsa over top. Bake for 50 to 55 minutes or until no longer pink in center and internal temperature of loaf reaches 165 degrees F. Let stand at room temperature 5 minutes before slicing.
