Peanut Butter Fudge Bars

Ok, so this doesn’t in one bit look appetizing at all. It was so quick and easy to make though. I was dying to try it, so quickly made it tonight while dinner was cooking in the oven. I put two in the refrigerator and two in the freezer (to see which method I liked the best…the jury is still out). I did try one from the freezer after dinner. It was really good. It tasted healthy, but had a really good chocolate peanut butter flavor to it. I would make them again. This was very simple and quick to make.
PEANUT BUTTER FUDGE BARS
Serves 4
4 scoops chocolate protein powder
2/3 cup flax meal
4 TBSP natural peanut butter, unsalted
1/4 cup water
Stevia or any other Clean Eating approved sweetener, to taste
Note: Clean Eating Approved Sweeteners: Sucanat, Maple sugar flakes, Agave nectar, Honey (limited amount) , and Stevia
Mix all ingredients in a large bowl and stir. If sweetener is desired, choose your favorite natural sweetener, such as stevia. At first, it may seem like it’s not enough water, but keep stirring and it will eventually become a sticky blob of dough. Add 1 TBSP water at a time, if needed.
Divide the mixture into 4 equal portions and place in separate pieces of wax paper, shaping them into bars. It’s easier to shape them by lying wax paper on one side of a small casserole dish, pressing the dough into the natural shape of the dish.
Store the bars in the fridge or freezer. You can eat them chilled, frozen or even right out of the bowl.
