Vegetable Quesadillas


Last night we had one of our favorite dinners, Vegetable Quesadillas.  Granted, I didn’t actually fold them in half and cook them the way the directions described, but they tasted just the same.  We can just call them open-faced Vegetable Quesadillas.

These little guys have so much flavor!  I will say that I’ve never had a quesadilla on a corn tortilla (usually it’s a flour tortilla), but it was quite good (and I’m not really a fan of corn tortillas).  We will definitely have these again…..um, maybe as early as tonight. :)   Yummy!

Weekly Weigh In


Well, I stayed the same this week (blaming it on Aunt Flo’s visit again…man, that feels like just last week that she visited…*sigh*).  Nothing exciting to explain.  I did very well this past week with lifting weights, but didn’t do so well with cardio.  It’s definitely something I need to incorporate together (they go hand-in-hand).  I did purchase a few DVD’s on eBay this past week to help get me motivated (some step videos and kickboxing).  We’ll see if they get me motivated to work in some cardio this week.  We’ll see how this week goes.

Tex-Mex Morning Frittata


Wow, this breakfast was a pleasant surprise.  We both loved it.  It wasn’t too filling, but tasted amazing!  It was very simple to make and had a lot of flavor.  I’m sure my husband would have preferred meat, but this could be a quick addition and I would personally cut the tomatoes up a little finer, but that would be the only changes.  This will definitely be made again!

Black Bean Tostada


My husband is working from home today, so I thought I’d take some extra time to make a nice lunch (versus slapping some meat and cheese on some bread and calling it a day).  Today we tried the Black Bean Tostada (and by we, I mean me, as my husband does not eat beans…..his was a Chicken Tostada).  We both loved our version of Tostada!  It was so easy to put together.  The only time consuming thing was chopping up veggies, but now that they’re done, having leftovers of this meal will be a cinch.  Two thumbs up on this recipe!

Spicy Black Bean Soup


If I go to a restaurant and they offer Black Bean Soup, I always order it.  There’s something about it that I just love.  Tonight, I actually made my own Black Bean Soup (“clean” style).  I found the recipe on the Clean Eating Forums and so glad I did.  This soup is really good!  I tried it several ways (as a dip on a tortilla chip, in a tortilla as a bean burrito, and as it was meant to be eaten…as is, in a bowl).  All those ways were great!  I can’t wait for lunch tomorrow.  Can you guess what I’m having?

Weekly Weigh In


I stepped on the scale this morning and lost another pound (and this is after half a large pizza last night…..wow, did I just admit that?).  So, I’ve now lost a total of 5 pounds, which translates to 20 sticks of butter.  Yea!  Some progress.

I’ve decided to do the Body-for-LIFE workout plan (weights three times a week and cardio three times a week with one day off from exercising).  We’ll see if I can stick with it.  I’m determined to get in at least 5 days of working out, but would love to work out a sixth day (which would be a Saturday).  There’s just something about working out on the weekends that never sticks with me, which is why I say, “we’ll see if I can stick with it”.

My eating plan will be the Eat Clean diet, which I’ve been doing, but not for every meal.  You can tell if I Eat Clean because I post the recipe here.  When I’m not posting recipes, I’m either making the meal again, eating leftovers of the meal, or not eating clean (which is probably the actual reason).  I would like to hit it hard, but it obviously takes commitment and I’ve never been committed to following a diet through.  I keep telling myself this is a way of life, but then think what way of life doesn’t include French toast smothered with butter and syrup for breakfast, fast food for lunch, and Mexican for dinner.  Ok, so that just proves what I’d prefer to be eating on a daily basis and why I need to lose weight.

So….here’s to another week….

Open-Faced Red Pepper Hummus Sandwich


Lunch today tasted VERY healthy (almost like eating air, since I feel comfortable, but not full by any means).  We had a Red Pepper Hummus Sandwich.  It was my husbands first experience tasting hummus and he didn’t complain at all.  I think he would have preferred a little meat on the sandwich though.  The sandwich was really good and I will make it again, with one change.  We both agree that the parsley needs to be substituted by cilantro.  The parsley (in our opinion) did not go well with this sandwich at all.  Tomorrow, I’m having this for lunch again with a couple of changes:  toasting the bread (for something different) and using cilantro in place of the parsley.  I can’t wait to see how it tastes.

Peanut Butter Fudge Bars


Ok, so this doesn’t in one bit look appetizing at all.  It was so quick and easy to make though.  I was dying to try it, so quickly made it tonight while dinner was cooking in the oven.  I put two in the refrigerator and two in the freezer (to see which method I liked the best…the jury is still out).  I did try one from the freezer after dinner.  It was really good. It tasted healthy, but had a really good chocolate peanut butter flavor to it.  I would make them again.  This was very simple and quick to make.

Brown Rice Meatloaf


Tonight we had Brown Rice Meatloaf for dinner with steamed broccoli.  I’m not a huge meatloaf fan, but the one I made tonight was really good.  It could have something to do with the fact that it tasted nothing like meatloaf (my opinion).  It was extremely juicy and had a ton of flavor.  We both liked it and I will be making it again.  It was very quick to get together, but keep in mind that it needs to bake in the oven for an hour.
