Brown Rice Meatloaf


Tonight we had Brown Rice Meatloaf for dinner with steamed broccoli.  I’m not a huge meatloaf fan, but the one I made tonight was really good.  It could have something to do with the fact that it tasted nothing like meatloaf (my opinion).  It was extremely juicy and had a ton of flavor.  We both liked it and I will be making it again.  It was very quick to get together, but keep in mind that it needs to bake in the oven for an hour.

BROWN RICE MEATLOAF

Serves 6

1 lb lean ground turkey
1 cup cooked brown rice
1 egg
3/4 cup plain, low-fat Greek yogurt
1/2 cup finely chopped onion
1/2 cup finely chopped red, green or yellow bell pepper
1/2 cup finely chopped celery
1 TBSP low-sodium soy sauce
1 tsp sea salt
Fresh ground black pepper
1 tsp crumbled dried oregano
1 tsp crumbled dried basil

Preheat oven to 350 degrees F.

In a large mixing bowl, combine all ingredients with a pair of clean hands. Place in a loaf pan that has been prepared with a light coating of nonstick cooking spray. Bake for about an hour. Remove from oven and let stand for 10 minutes before cutting.
