French Twist Egg White Omelette


I had a surprisingly great breakfast this morning.  I’m not much for eggs, and egg whites sort of freak me out (I need that yellow color), but I made the recipe as listed and loved it!  I will be making this again for sure (may even eat it for breakfast every day for a week).  The combination of flavors was amazing!  I used the Laughing Cow Garlic & Herb spreadable cheese and ended up eating each bite with some of my toast.  It tasted more like a Chip Beef Sandwich (with asparagus, of course).  Very tasty!

I also made some more Peanut Butter Chocolate Balls (due to a request from my next door neighbor).  She’s always so good about sharing her yummy treats with me.  Sorry I didn’t share the first batch with you Jen!

Peanut Butter Chocolate Balls


I think I may have found a new favorite for dessert.  I made the fastest dessert ever (unless you take into account that they need to be refrigerated for a few hours).  This was so quick to throw together.  They taste amazing too and very filling.  I will be making these again soon (because I know they’re not going to last long).  Good thing they’re made of ingredients I normally have on hand.

Chicken Fajitas


I’m still on a Mexican kick (I could eat Mexican food every day). We had Chicken Fajitas tonight for dinner and boy were they good. I really love the fajita “seasoning” (more like a sauce) that was used in this recipe. The flavor was so good! This was a quick and easy recipe and we both loved it. I diced everything up instead of slicing it lengthwise (like normal fajitas) because I was chopping up more of the same veggies to use for an omelet tomorrow. We’re out of shredded cheese, so I used deli cheese slices. Not quite the same, but the flavor was, so that’s all that matters. We’ll definitely eat these again. Very good!

Sweet and Nutritious Oatmeal


This morning for breakfast, I had the Eat Clean Sweet and Nutritious Oatmeal.  While I am not a fan of oatmeal (unless it’s Quaker Oats already pre-made packaged oatmeal and of course more fattening, so it tastes better), this oatmeal wasn’t too bad.  The flavor was very good and this recipe was so quick and easy to make.  It’s also very filling.  I will definitely make this recipe again.

Pad Thai Clean-Eating Style


For dinner tonight, we tried Pad Thai.  I have to say, at first I wasn’t too impressed with it.  There are many textures and flavors to this dish.  The more I ate it, the more I enjoyed it.  I would make it again, but it’s not my favorite dish we’ve tried.  On the other hand, my husband did eat what he was served (added chicken for him….he’s a meat guy), but I think he would prefer I not make this again.  He agrees that the texture and many flavors were hard to get used to.

No-Fuss Greek Yogurt Parfait


For breakfast, I made a quick yogurt parfait.  My strawberries were getting pretty bad, so I didn’t have enough to use, but enough to make my parfait colorful for the photo.  I chose slivered almonds instead of using pecans or whole almonds crushed up.  This was so simple to throw together and very tasty.  A great breakfast if you’re running short on time in the morning.

Travel Creations


I found both the idea for this Vacation Card and Travel Journal in a magazine and thought they were pretty cool, so decided to make them. I had the most fun making the Travel Journal. This was so simple and cheap to make too. I just used a regular sized file folder, four sheets of decorated scrapbook paper (12″ x 12″), adhesive, ribbon (to tie it shut), vellum envelopes, and clear packing tape (to adhere the vellum envelopes). I also added small post-it notes, a small baggie, a travel log (to take notes), and a calendar (using the months of the travel dates). I Velcro’d the travel log in so it would be easy to remove and write in, then put back in the Travel Journal for safe keeping. I gave these away and hope to make more.

Spaghetti with Meatballs


Tonight I made a quick meal…Spaghetti with Meatballs.  It was good, but nothing fantastic.  I’m not sure if I’d make it again or not.  I love the meals that have a ton of flavor and you’re left wanting more.  The ones where you crave leftovers.  This meal was not one of those.  The meatballs had a little too much herb flavor to them, the sauce was bland (since it’s just tomato sauce) and the pasta was nothing special.  We tried Rice Pasta tonight (for something different).  I may try this recipe again with changing a few things up.  We’ll see.

Bison Steak, Twice Baked Potatoes, Orzo Primavera, and Cheddar Muffins


Last night we ate a feast!  It was all “clean” though.  We had Bison Steaks, Twice Baked Potatoes, Orzo Primavera, and Cheddar Muffins.  Yep, that’s a lot of starch.  I didn’t say it was a balanced meal.

The steaks were really good!  They had a lot of flavor to them and were easy to prepare.  The twice baked potatoes were my favorite.  They tasted amazing!  The Orzo Primavera was good, but not great.  It tasted very bland.  I’m trying to think of some other spices or something to add to it as we finish up the leftovers.  The Cheddar Muffins were good, but tasted like wheat bread or a bran muffin.  The cheddar wasn’t very present in them.  Good, but not great.  That’s the low down on those dishes.  The steak and potato will definitely be made again!

Magazine Holder


I was reading a magazine (All You) the other day and they had a great idea of using a wine holder as a magazine holder.  Well, we don’t drink wine, so I didn’t have a wine holder on hand, so I went to the first place I usually go to (eBay or Craigslist) and started searching to see what was out there.  I was thrilled to have found a dark brown leather one (which goes well with my office).  Even better, I got it for $3 ($7 shipped).  I couldn’t find something that nice locally for that price if I tried.

I always have magazines laying on my Project Table and taking up space.  I get a few magazines and then my neighbor and I always swap magazines, so I have a pile when I get some from her too.  I was sick of seeing the pile on my Project Table, so loved this storage idea (somewhat of a conversation piece).  My husband thought it was cool, but didn’t like the idea of the magazines being folded.  Well, I always fold my magazines back while I read them anyway, so they get distorted to begin with, so this doesn’t bother me one bit.  I guess it’s a personal thing.

Anyway, this is my latest and greatest addition to my office.  I’m thrilled to have a more organized way of storing my magazines (since the books I’m reading are currently taking up the space in my actual magazine holders).
