Power Oatmeal Pancakes

It’s been a while since I’ve made anything “clean”, so I thought I’d start today out right. I had Power Oatmeal Pancakes this morning for breakfast. I even had them plain (no syrup or anything on them). I really liked them. There was a lot of flavor to them. They tasted hearty and were very filling. Two pancakes (the serving size) was plenty for me and I have four left over (the recipe makes six). I’ve learned with leftover pancakes or french toast, to just put it in the toaster to warm and crisp it up and it tastes as good as new the next day. I’ll be enjoying these again tomorrow and already looking forward to it.
POWER OATMEAL PANCAKES
Serves 3
6 egg whites, beaten until fluffy
1/2 cup low-fat cottage cheese
1 scoop whey protein
1/2 cup oatmeal, uncooked
1/4 cup wheat germ
1/4 cup flax seed
1 tsp baking powder
1 TBSP canola oil
1/2 tsp cinnamon
1 tsp pure vanilla extract (my addition, not part of the recipe)
Cooking spray
Place all ingredients except beaten egg whites in a food processor and pulse or blend until mixture is uniform.
Pour blended ingredients into a bowl and add the egg whites. Fold until just blended.
Prepare a griddle with cooking spray. Ladle pancake mixture onto griddle and cook until both sides are browned.
Optional: Skip the syrup and place a dollop of unsweetened applesauce on each pancake. Or you can try this little trick: Place 1/2 cup of blueberries or raspberries in a small saucepan along with 1 tablespoon water. Mash the berries and bring the mixture to a boil. When the fruit is uniformly hot and beginning to get syrupy, remove from heat and pour into a small jug. Drizzle over pancakes.
