Turkey Enchiladas

Last night I made Turkey Enchiladas. While they were good, they were lacking something (some moisture). We added salsa to them (which is not mentioned in the original recipe) and this made all the difference. We would definitely eat these again, so they’ll go in our “keep” pile.
TURKEY ENCHILADAS
Serves 4
1 lb. ground turkey breast
Chopped onion
Minced garlic
2 TBSP chili powder
1 tsp cumin salt
Chopped cilantro
Corn tortillas
Cayenne pepper (optional)
Fat-free shredded Cheddar cheese
Fat-free sour cream
Salsa (our addition to this recipe)
Preheat oven to 350 degrees F. Saute turkey breast with onion and garlic. Add chili powder, cumin, salt, and some of the cilantro. Spray a glass baking dish with cooking spray. Layer corn tortillas on bottom of baking dish and top with cooked turkey mix. Top with corn tortillas and add another layer of cooked turkey meat. Put one last layer of tortillas, layer top once again with turkey mix and bake in oven for 15-20 minutes. Remove from oven. Serve and sprinkle with fat-free shredded Cheddar cheese and sour cream and top with remaining cilantro. Sprinkle cayenne pepper (if desired).
