Eat Clean Chocolate Mousse


We had this for dessert.  It’s also a “clean” recipe.  It’s called Tofu Chocolate Mousse.  Now, I’ve never tried tofu before in my life and have been freaked out by it in the past.  What in the world is it and why would I want to eat it anyway?  I’ve heard that tofu takes on the flavor of whatever you’re putting it with.  There are several types of tofu (silken, soft, firm, extra firm….).  This is my first experience with tofu and I have to say that I loved this recipe.  I have another recipe to create this week that uses extra firm tofu, so we’ll see how I feel about that.  This dessert was divine!  I will be making this again (and often).

TOFU CHOCOLATE MOUSSE

Serves 4

3/4 cup dark chocolate chips or dark chocolate bars, broken into pieces
12oz. silken tofu at room temperature, drained
1/2 cup warmed skim milk or soy, rice, or almond milk
1 tsp vanilla

Melt chocolate chips in a double boiler or in the microwave. Make sure to let the chocolate melt slowly. Stir until chocolate is uniformly smooth.

In a food processor, combine tofu, melted chocolate, warmed milk and vanilla. Process until smooth. Place tofu mixture in fine mesh strainer or sieve, pushing through with the back of a wooden spoon, into a medium decorative serving bowl. Serve from the bowl or ladle into individual serving bowls. Chill and serve.

    This mousse is amazing!! I don’t think anyone would ever know its tofu!! We made it last night…but couldn’t find silked tofu because every store was out of it. (I guess EVERYONE in the Raleigh area was making this recipe this week!) :) Soooo we used soft tofu and blended it to be super creamy in our Bullet (that’s probably the same thing as the silken tofu anyhow I would guess). WOW it came out amazing. I didn’t even put it through a strainer and it was perfect. So delicious! I think this is better than any other mousse I’ve ever had…and its healthier too! Thanks for sharing your recipes! I am always looking for new healthy dishes to make!! :)

    I’m so glad you liked it! I’ve tried both ways (using the strainer and not). One time not using the strainer, it turned out perfect, but the next time not using a strainer it didn’t turn out so well. I guess that’s why they call for warmed milk. I think the cold milk (yes, I was too lazy to heat it up) made the melted chocolate chips start to harden, so that particular batch had some very tiny “chunks” in it, but it was chocolate (not the tofu). I love this treat though and have made it four times now! It’s so easy to make!
