My Favorite Blender


I love the Magic Bullet.  Now, I’m not one to buy the “as seen on TV” things, but this is a must-have!  I use this little guy for everything!  I make smoothies often and it’s so easy to use (just put your ingredients in the cup, blend, and drink out of the cup you blended your smoothie in….it’s that simple, and just put your cup in the dishwasher to clean, now that’s easy).  The photo above is from this morning (blending my chocolate pancake).

Chocolate Pancakes


I had a brownie for breakfast this morning.  Ok, so it wasn’t a brownie, but tasted very close to one.  I made the “Eat Clean” Chocolate Pancakes and they were good!  The picture is not appetizing at all (looks like burned pancakes).  The recipe makes one single serving, so I made three small pancakes (which didn’t happen to be that small).  I will be making these again.  This breakfast is very filling and oh so tasteful!

Morning Coffee


I’m a HUGE fan of the Keurig (single cup) Coffee Maker .  I love coffee, but 1 cup at a time is perfect for me (which is why having a regular coffee maker is pointless for me….there would be too much waste).  We purchased the Keurig Coffee Maker almost two years ago.  We enjoy at least 1 cup a day (and sometimes up to three during various points of the day).  Keurig offers so many choices of flavored, regular, and decaf coffees, not to mention teas, hot chocolate, and apple cider.  This has been a great investment for us (Starbucks type quality right here at home for a fraction of the cost).  So, here’s to caffeine and a great morning!

Pork Chops and Quinoa Veggie Saute


Tonight we had Adobo Rubbed Pork Chops and Quinoa & Vegetable Saute.  I used a larger plate (and so didn’t need to), so I’m sorry the portions look very tiny. :)  The pork chops are out of this world!  If you are a fan of pork, you have to try this recipe.  It’s amazing!  The flavor is outstanding!  We have made this recipe before and we continue to make it at least three times a month.  We’ve made it for friends and family and have gotten rave reviews.  It’s a must-try.  The Quinoa & Vegetable Saute was very good.  I’ll definitely make it again.  I will say that it didn’t go with the pork chop recipe, so I won’t be making them together again.  My husband wasn’t thrilled with the cabbage, but I didn’t mind it.  It would taste just as great without the cabbage, so I may try it that way the next time I make it.  There is a lot of flavor to it (I’m definitely having some for lunch tomorrow).

Turkey Enchiladas


Last night I made Turkey Enchiladas.  While they were good, they were lacking something (some moisture).  We added salsa to them (which is not mentioned in the original recipe) and this made all the difference.  We would definitely eat these again, so they’ll go in our “keep” pile.

Monday Weigh In - First Week Results


Every Monday I would like to weigh in and post how much I’ve lost on my blog.  This will serve as a motivation to me (in case anyone is checking up on me) and to just say it “out loud” (for anyone to read) will make this blog my accountability and will help me further my goal.  Please feel free to check up on how I’m doing each Monday or know to skip this day if you’re not interested. :)  One person who has motivated me to put my stats on this blog is Donna Downey.  Her recent post is all the motivation I need.

I will say that I did not exercise last week at all (although I had planned to).  I also did not eat extremely well, but far better than I ate in the weeks past.  I did incorporate several Eat Clean recipes, which I think makes a difference.  I also enjoyed several processed foods, including ice cream, licorice, chocolate chips, and a little fast food (all in moderation though).  I’m not about jumping into something “cold turkey”, so this week, I’ll do a little better (no fast food) and we’ll see where it takes me.  I also know that the weight dropped this week was a lot of “water weight”, but yet still very motivating (enough for me to want to continue on to see what the next week holds).

So, with that said (drum roll please), I lost exactly 5 pounds (to the ounce) this week.  Yea! My BMI went down 0.9, which is awesome! I am wanting to lose weight for my health (with the added benefit of looking good), so I will be watching my BMI and rooting for that “healthy” BMI number (only 17 more pounds to go to get to the “healthy” range).  *sigh* Diabetes and Heart Disease run heavily in my family and at the rate I’m going, I’m heading down that path. It’s time to make a change.

BLT Sandwich and Cucumber Salad


For lunch today, we had Turkey Bacon Pesto BLT’s and Cucumber Salad.  Both are Eat Clean recipes.  The BLT Sandwich was good, but I’m not a fan of tomatoes, but it tasted healthy.  I would make it again.  The cucumber salad was so easy to make and tasted really good.   Even my husband liked it.  When you get a thumbs up from the husband, you know it’s good.

How I Drink My Water


Drinking water is easy for me, because I love it, but with being busy all day, I sometimes forget to drink.  I recently purchased several Tupperware Insulated Tumblers and fill one up each morning with ice and water, put the lid on, insert my straw and I’m ready to start my morning (after coffee, of course).  It sits next to me on my desk (so it’s in plain view) and reminds me to drink.  When it gets low or I’m heading toward the kitchen, I take it with me to fill up and continue on with my day.  Since the tumbler is insulated, it helps keep my water cold and by the end of the day, I easily have my 8 cups of water drank.

Eat Clean Chocolate Mousse


We had this for dessert.  It’s also a “clean” recipe.  It’s called Tofu Chocolate Mousse.  Now, I’ve never tried tofu before in my life and have been freaked out by it in the past.  What in the world is it and why would I want to eat it anyway?  I’ve heard that tofu takes on the flavor of whatever you’re putting it with.  There are several types of tofu (silken, soft, firm, extra firm….).  This is my first experience with tofu and I have to say that I loved this recipe.  I have another recipe to create this week that uses extra firm tofu, so we’ll see how I feel about that.  This dessert was divine!  I will be making this again (and often).

First Eat Clean Creation


I’ve eaten clean before, but have never taken photos of my creations, which is why this is titled as my “first” eat clean creation (first one photographed).  We had this for lunch today.  It’s called Turkey Meatball Sub.  It was really good!  We both liked it and it will now go on our “make again” list.
